Offering expertise both in and out of the kitchen, Donald Bleau is a skilled restaurateur and executive. Currently employed as the President and CEO of Eggspectation Restaurants, LLC, Bleau is putting his years of culinary and business know-how to work in bringing this unique chain of upscale casual dining to the United States. Under Donald Bleau’s watchful eye, Eggspectation Restaurants plans an expansion to 70 U.S. Locations in the next 5 years and 200 U.S. locations in the next 10 years. Trained in business management at Barry University, Donald Bleau earned an MBA with an emphasis in finance and marketing in 1971.
In addition to his formal business education, Bleau also earned an impressive Grand Diplôme from Le Cordon Bleu Culinary Institute of Paris, France. The Grand Diplôme is the highest culinary arts degree afforded by Le Cordon Bleu and represents a mastery of both traditional cuisine and pastry. Through the strategic combination of both of these impressive educational achievements, as well as years of practical experience in the food industry, Donald Bleau has developed all the skills necessary to guide a restaurant to success. In addition to his professional resume, Donald Bleau is also a committed member of his community. A proud supporter of many charities, Bleau understands the need to give back to the neighborhood and to help provide for a safer and more prosperous world. Some of the organizations Bleau actively supports include Needle’s Eye Ministries, HABcore of Red Bank and Aslan Youth Ministries. Through his involvement with Aslan Youth Ministries, Bleau has had been fortunate enough to be a part of the group’s mission trips to Haiti. A charter founder of the American Institute of Wine and Food, Donald Bleau spends his spare time playing golf and tennis, reading and entertaining his guests with delicious food and drink.
