| Monica Toguchi preserves Highway Inn’s commitment to providing fresh, quality, locally produced Hawaiian foods by advancing company growth as Vice President of the 62-year-old family-run food service business. The granddaughters of founder Seiichi Toguchi, Monica Toguchi and her sister, Regina, ensure that their grandfather’s vision for Highway Inn is upheld. Monica Toguchi oversees the internal organization and strategy development for Highway Inn’s long-term and day-to-day goals. Highway Inn restaurant was founded in 1947 at a location along the Farrington Highway in Waipahu, Hawaii. More than six decades later, Highway Inn has grown to include a seafood market and catering services that specialize in traditional Hawaiian cuisine and local island comfort foods. Over the years, Highway Inn has been widely recognized in the islands. In 2008, Highway Inn was voted Honolulu Magazine’s Best Kalua Pig, Best Lau Lau, and Best Family Style Caterer. Highway Inn has also received Honolulu Advertiser’s 2009 Best of the Best Hawaiian Restaurant, the 2008 Hale Aina Award in the Hawaiian Food Category, and Pacific Business News’ 2008 Best in Business Finalist designation. Monica Toguchi pursues her educational interests while upholding her family and professional commitments at Highway Inn. After earning her Bachelor’s degree in Business Administration and Master’s degree in Counseling and Guidance from the University of Hawaii, Monica Toguchi pursued doctoral studies in psychology at the nationally recognized Counseling Psychology Program at University of Oregon. Previously, Monica Toguchi applied her expertise to a graduate teaching fellowship with the College of Education at the University of Oregon, where she served as a testing and assessment specialist for the University, evaluating students with possible hyperactivity disorders and learning disabilities. Monica Toguchi spends her free time outdoors, relishing Hawaii’s natural beauty by biking and hiking and exploring new restaurants and local eateries. Monica Toguchi furthers her commitment to her community by staying active with the local Chamber of Commerce and by supporting organizations that work to preserve island living and self-sustainability. Every year, Highway Inn also provides $1,000 scholarships to five graduating high school seniors from the leeward area who have exemplified the spirit of hard work, perseverance, and discipline that contributed to the longstanding tradition and success of Highway Inn today.
